Gluten-Free Banana Pancakes

I’ve discovered lately that bananas are a magical fruit. You can do so much with them! They are especially awesome, since gluten-free desserts made with bananas seem to turn out just as great as their gluten-full versions. (See ice cream, the “treat yo self” sandwich, and banana bread)

So, when I saw this recipe on pinterest, I had to try it! I made a modification to make the batter a bit thicker, but otherwise it was pretty darn good!

 

Ingredients
2 eggs
1 banana
1/2 cup gluten-free oats
1 tbsp gluten-free flour
1/4 cup applesauce
1 tsp vanilla
1/2 tsp cinnamon

Try topping with:
Peanut Butter
Vanilla Greek Yogurt
Chocolate Chips
Granola
Strawberries
Maple Syrup
Honey
Whipped Cream Cheese
Nutella

Instructions
Blend oats in a food processor or blender until ground. Add the remaining ingredients and blend until smooth.

Heat a buttered pan over low-medium heat.

Drop batter in increments of 1/4 cup into the skillet. Heat until the top of the pancake bubbles, and the edges start to brown, then flip. These get brown VERY quickly, so keep your eye on them!

Top with whatever your heart desires! I chose to go with vanilla Greek yogurt and chocolate chips (I can’t say no to chocolate…I swear I can quit any time).
