The “Treat Yo Self” Sandwich

Last weekend I spent hours cleaning the house, doing laundry, and yard work. As much as I enjoyed that, I decided that I deserved a “Treat Yo Self” lunch. I thought the word “treat” and immediately thought of this sandwich. Not super healthy, but it IS super delicious!

 

Ingredients
2 pieces bread (I used Udi’s Gluten-Free White Bread)1 tbsp butter
cinnamon
1 tbsp creamy peanut butter (my fave is Maranatha Organic)
1 tbsp Nutella
1 banana
2 tbsp vanilla or honey granola (try Love Grown!)

 

Instructions
Butter 1 side of each slice of bread. Sprinkle desired amount of cinnamon over the butter. Flip the slices on a plate (a bit of the cinnamon might fall off, but no worries). Spread peanut butter on the other side of one slice, and Nutella on the other slice.

Slice the banana in 1/4″ circles.

Heat a skillet to medium. Once hot, place one slice butter side down in the pan. Arrange banana slices in a layer on the bread. Sprinkle granola over the bananas. Then, place the remaining bread slice butter side up over the bananas and press down a bit so the granola doesn’t fall out.

Heat until the buttered side of the bread is golden brown, then flip and heat the other side until golden.

Transfer to a plate and slice. If there’s extra granola in the pan, drop it onto the plate! You can pick it up with the ooey gooey deliciousness that is your sandwich.

So…three words:

Treat. Yo. Self.
