I’ve wanted to try making a tofu scramble for so long, but was always worried that it would turn out gross and I would have wasted a block of delicious tofu. Luckily, I got over my tofu-wasting fear with hunger…
Made this healthy, delicious meal before a day at the waterpark, and it kept me full and energized. Woo for superfoods!
Ingredients
1 block firm tofu, drained
1/4 cup green onions, chopped
1/4 cup jack cheese (or dairy-free cheese for the vegans)
1/4 cup crumbled blue corn chips
2 tsp garlic powder
1 dash cumin
1 dash turmeric
1 tsp cilantro
Salt and pepper
2 tbsp olive oil
Instructions
Heat 1 tbsp olive oil in skillet over medium heat. Crumble tofu with your hands into the skillet so it ends up in bite-size pieces. This is a vegetarian version of making ground beef by hand. Add second tbsp olive oil, chopped green onions, garlic powder, cumin, turmeric, and cilantro. Sauté until outsides of tofu pieces are slightly crispy and yellow.
Turn off heat and mix in the cheese until slightly melted. Place in bowl and top with desired amount of salt and pepper, along with the crumbled chips. This also tastes great with sour cream and salsa!
If you’re making this for breakfast, pair with orange juice. If you’re making this for dinner… pair with a margarita 🙂
