Easy Gluten-Free Vegan Stir Fry

Stir Fry might be the easiest meal in existence. It’s very difficult to mess up, and you can put almost anything in it. This dish is incredibly simple, with very few ingredients. And most of them may already be in your pantry!

My favorite kind of stir fry is a basic vegan mix with an Asian flavor.

Ingredients:
1 block tofucubed and drained
pepper
salt
2 cloves garlic, minced
1 cup baby carrots, partially pre-cooked
1 cup chopped green pepper
1 cup frozen broccoli florets, pre-cooked
2 TBS canola oil
3 TBS soy sauce
1 cup cooked white rice

Instructions:

Cook rice according to directions on package

Heat canola oil over medium-high heat in wok or large frying pan. Add minced garlic, sautee till it is bubbly around the edges. Meanwhile, sprinkle pepper and salt over tofu. Add the tofu to your hot pan, and sautee until all sides are crispy.

Add green peppers and carrots to the pan, and sautee in the oil and garlic until crisp-tender.

Add broccoli to the pan and sautee in garlic and oil for a few minutes. Then, add soy sauce. Sautee for a couple more minutes until tofu has absorbed the sauce.

Mix with rice, and enjoy your easy, super healthy, vegan, gluten-free stir fry!
