If I haven’t already professed my love for edamame here…I will do so now. I FREAKING LOVE EDAMAME!!! It tastes amazing, and is ridiculously healthy. Though I love it with the shell still on, shelled edamame is delicious too. I usually eat it as a side, mixed in with rice or noodles, or as a complete meal when that’s all I have and I haven’t had time to go grocery shopping…which is what happened tonight. But I don’t care because it was delicious!
All you have to do for this quick, delicious, healthy, protein-filled snack & side is this:
Heat shelled edamame for 3-4 minutes in microwave.
Melt approx. 2 TBS light butter in microwave (or use 2 TBS olive oil to make this vegan and even healthier)
Mix two dashes of garlic powder w/ melted butter
Pour butter mixture over edamame and stir
Grind a small amount of sea salt over edamame
