Product Review: Udi’s Harvest Crunch Muffins

If you’ve been gluten-free for any length of time, you’ve at least heard of Udi’s Gluten Free, if not eaten their food. Recently, Udi’s sent me a box of goodies to try, review, and create recipes for. It was Celiac Christmas!!

I tried the Everything Inside Bagels topped with avocado, which were amazing. And I may or may not have demolished them in a couple short days.

Yesterday while working from home, I tried the Harvest Crunch Muffins. It was snowing outside, I had a pot of hazelnut coffee all to myself, and I was all cozied up in pajamas. I was really working though, I swear. Anyway, I tried one of these muffins and was not disappointed!

I’m normally not one for fruit in baked goods. I love fruit, and I love baked goods, just not usually together. I don’t know why, I think it probably makes me unamerican but I just never got into it. So I was honestly a little hesitant when I tried these, since they were made with cranberries. But I was extremely wrong! The cranberries didn’t overwhelm, and the little bites I did get went so well with the flavor that I was grateful for them. The muffin was flavorful, sweet enough but not over sweet (I also don’t have much of a sweet tooth…what is wrong with me?!), and went perfectly with my coffee. It tasted like fall in muffin form!

I was also really pleased with the texture. They were light and fluffy, I didn’t feel like I was weighed down with bricks like with the gluten-full muffins I used to eat. Not at all what you would expect from a gluten-free baked good.

These would be great for breakfast or snacks throughout the winter, maybe for something light to eat Thanksgiving or Christmas morning before your huge feasts. Even your gluten-eating friends and family will love them! There’s a good chance they will have no clue they are gluten-free.

PRO TIP: Put the muffin on a microwave-safe plate and heat it up for 10-15 seconds. Yum yum yum yum yum yum yum okay I’ll go eat one for dessert right now.
