Cilantro Lime Rice with Sauteed Peppers

I am wickedly obsessed with Chipotle’s Cilantro Lime Rice. Seriously, way too delicious. So I tried to recreate it. I didn’t quite get there, mainly because I think they use a Basmati or Long-Grain Rice, and I used the only rice we had (Minute Rice…the shame). However, it was still a pretty tasty little lunch! I plan to document my future attempts at recreating this delicious rice.

Ingredients
1 cup rice of your choice
1 tbsp fresh cilantro, chopped
Juice of 1 small lime
1 green bell pepper, diced
1/2 tbsp olive oil
Salt & Pepper to taste
1 tbsp Tofutti vegan sour cream, if desired

Instructions
Cook rice according to directions on package. While rice is cooking, heat olive oil in a small sautee pan. Add in diced bell pepper and sautee until veggies are crisp-tender.

Once rice is cooked, add peppers to rice, and stir.

Then add the lime juice and cilantro, stirring well to mix.

Add a dash of salt and pepper to taste. Serve with some sour cream (vegan or not), and a lime wedge, or use this as a base/side dish with some other foods!
