Cilantro Corn Salsa – Chipotle Copycat Recipe

So, I kind of have a Chipotle obsession. Okay, more like an addition. I get the veggie burrito bowl every time, and one of my favorite things in the bowl is Chipotle’s corn salsa. SO GOOD.

As I was browsing Pinterest one day every single day, I came across a copycat recipe. Yes! I tried it out for a tailgate, just for dipping with chips, and it was a big hit. Absolutely delicious. Thank you howsweeteats.com for the great recipe!

1 12-ounce bag of frozen sweet yellow corn, defrosted and drained

2 medium-sized jalapenos, seeded and chopped

1/2 red onion, finely chopped (about 1/3 cup)

3/4 cup fresh cilantro, torn or chopped

juice of 2 limes

1/2 teaspoon salt

1/2 teaspoon pepper

Combine all ingredients in a bowl and mix. Season with additional salt and pepper, cilantro, jalapeno or lime based on what you or your guests (just kidding, this is your food! 🙂 ) like best.

I made this the night before the tailgate and storing it in the fridge overnight really let the flavors combine and made it extra great. I may have eaten some for breakfast….shhhh.

As with most cooking, I recommend enjoying a nice beverage too. I was drinking a Gluten-Free Omission Beer.

    A friend brought this over for our super bowl party and it was delicious!!! Even our three semi picky kids loved it! This is my new favorite recipe, we’ve even had it as a side with dinner a few times since then. 🙂
