These pecans are amazing. One of the best parts of the holidays is having a bowl of these on hand at all times. I got this recipe from my mom, because I just had to learn to make them at home! This past Christmas, and the one before that, I made several batches of these pecans to give out as gifts, and they always turn out to be a favorite! Just this week someone gave me back the empty tin so that I can “refill it next year.”
[December 2014 update] I added cinnamon to the original recipe to make it a little extra festive… and I love it!
Ingredients
1 lb. pecans
2 egg whites
1/2 tsp salt
1 cup sugar
1/2 cup butter (1 stick)
1/8 tsp cinnamon (optional to remove if you just want plain sugared, which is also delicious)
Instructions
Toast nuts in a 250 degree oven, 30 minutes in a metal cookie pan with a lip. Remove from pan and set aside. Melt butter in same pan.
Beat salt and sugar into egg whites until thick. Fold in nuts. Spread in pan and bake at 300 for 45 minutes, turning every 15 minutes. Cool in pan and then break apart with fingers.
Seriously, you won’t be able to stop eating these! Enjoy (and thanks Mom)!
